These are the grown-up, glow-up, “treat yourself on a Tuesday” cookie.
- In a medium bowl, whisk together the browned butter, light brown sugar, granulated sugar, and vanilla until smooth. Add the egg and egg yolk and whisk again until fully combined.
- In a separate bowl, whisk together the flour, salt, and baking powder.
- Switch to a spatula and fold the dry ingredients into the butter mixture. When the flour is halfway incorporated, add the chocolate and toffee and continue folding just until no dry streaks remain.
- Scoop the dough into balls (about 70–75 g each) and chill for at least 1 hour or up to overnight.
- When ready to bake, preheat the oven to 170°C. Line a baking tray with parchment paper and place 4–5 cookies on the tray, leaving enough room for spreading.
- Bake for 12–14 minutes, or until the edges are lightly golden and the centers look underbaked. They will continue to set as they cool.
- Allow cookies to cool completely on the tray. Sprinkle with flaky sea salt if desired.
*Notes:Oven temperatures vary. If using a fan-assisted oven, reduce to 160°C. For accuracy, use an oven thermometer.
