What Makes This Mousse Recipe Special?

  • Real dark chocolate. Like, the good stuff. Deep, slightly bitter, totally luxurious.
  • Cream + milk. To make a ganache base that’s smooth like velvet.
  • Egg yolks. For richness and structure. They turn the ganache into something seriously swoon-worthy.
  • Whipped egg whites. That airy, fluffy magic that gives mousse its signature lift.
  • A little sugar. Just enough to balance it all out.

Unlike some mousse recipes that rely on gelatine or heavy cream alone, this version brings together rich dark chocolate, silky ganache, and fluffy egg whites for a balanced texture that does not involve any gelatine or other stabilisers!

Tips for making the silkiest chocolate mousse

Blend your chocolate - Use a stick blender to blend your chocolate ganache to remove any lumps and emulsify the mixture to create a super silky base. Silky base means silky mousse!

Beat your egg whites till stiff peaks - Beating your egg whites long enough will give your mousse the structure it needs while it stiffens in the fridge. Underwhipping your egg whites and you'll end up with sloppy mousse

Add salt & vanilla - Don't skimp on this step! Vanilla and salt are the flavour boosters that will deepen your flavour profile and elevates it to the next level

Pair with olive oil - This might sound controversial, but olive oil pairs perfectly with chocolate. don't knock it till you've tried it!

Optional (but highly encouraged) toppings:

  • Shaved dark chocolate
  • A big dollop of whipped cream
  • Fresh raspberries or strawberries
  • Sea salt & olive oil (trust me)
  • A tiny pour of espresso on the side if you’re feeling fancy

Ingredients

  • 160gr heavy cream
  • 60gr whole milk
  • 250gr dark chocolate (70%) finely chopped
  • 50gr egg yolks (about 3 yolks)
  • 125gr egg whites (about 4 whites)
  • 2tbsp granulated sugar
  • salt & vanilla to taste

Instructions

  • Heat the milk and cream together in a small saucepan until almost boiling. Remove from heat and pour over the chopped chocolate. Let sit for 1 minute, then stir until smooth to form a ganache.
  • Lightly beat the egg yolks and stir them into the warm chocolate mixture. Mix well until fully combined.
  • In a clean bowl, whisk the egg whites until foamy. Gradually add the sugar while beating until stiff peaks form.
  • Fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then gently fold in the remaining egg whites until the mousse is smooth and airy. Don’t overmix!
  • Divide the mousse into glasses or small bowls and chill for at least 4 hours in the fridge.
  • Garnish with grated chocolate, a dollop of whipped cream, or fresh red berries. This mousse also pairs wonderfully with espresso or dessert wine.
