There’s something undeniably comforting about the smell of fresh sausage rolls baking in the oven. Buttery, flaky pastry hugging a soft, flavorful filling. These chicken sausage rolls with crispy chili oil take the classic up a notch, adding a subtle kick and depth that makes them impossible to resist.

Perfect for brunch, lunchboxes, or a cozy snack with a cup of tea, and the best part? They’re so easy to make with just a few ingredients.

These sausage rolls are the kind of recipe that feels effortless but somehow makes everyone act like you spent all morning in the kitchen. The flaky pastry, soft chicken filling, and that subtle chili kick? Total crowd-pleaser every time.

How to Make Chicken Sausage Rolls

Step 1: Prepare the Filling

Mix ground chicken, crispy chili oil, herbs, breadcrumbs, and egg. Knead gently with your hands for an even distribution of chili oil. This ensures a flavorful, moist filling.

Step 2: Shape the Rolls

Roll puff pastry, place the filling in the center, fold, and seal edges with a fork. Rustic edges are charming, don’t worry about perfection.

Step 3: Brush & Bake

Whisk egg with a splash of milk, brush tops, and bake 25–30 minutes at 200°C / 180°C fan. Golden, flaky pastry with a tender filling is the goal.

Step 4: Cool & Serve

Let rolls rest 5 minutes to firm up slightly. Serve warm.

Tips & Tricks for Perfect Sausage Rolls

Balancing Heat: Adjust chili oil based on taste. Mild? Start with 1 tbsp. Love heat? Go for 2 tbsp.

Moisture Matters: Breadcrumbs keep the chicken filling tender. Too little = sloppy, too much = dry

Shiny Tops: Brush with egg wash for that bakery gloss. Sprinkle sesame seeds or grated cheese for extra flair.

Make Ahead: Freeze unbaked rolls individually on a tray. Bake straight from frozen, adding 5 minutes.

Baking time and oven temperature

Remember, each oven is unique, so some adjustments to baking time and oven temperature might be needed based on your specific baking environment. All oven temperatures in my recipes are based on a conventional oven. If you bake with a fan-assisted oven, turn down the temperature slightly as these ovens tend to become hotter than a conventional oven at that temperature setting. Ovens have the tendency to deviate from the temperature you set the oven to. I would highly recommend using an oven thermometer to ensure the inside of your oven is at the right temperature.

Ingredients

  • 500gr ground chicken
  • 1 sheet of store-bought puff pastry
  • 1–2 tbsp crispy chili oil (adjust to taste)
  • 1 tbsp chopped chives
  • 1 tbsp chopped parsley
  • 2 tbsp breadcrumbs
  • 1 egg (for the filling)
  • 1 egg + splash of milk (for brushing)
  • Salt & pepper, to taste

Instructions

  1. Preheat your oven to 200°C / 180°C fan (390°F / 356°F fan) and line a baking tray with parchment paper.
  2. In a bowl, mix ground chicken, crispy chili oil, chives, parsley, breadcrumbs, and the egg. Season with salt and pepper. Use your hands to knead everything together — it helps the chili oil spread evenly.
  3. Roll out the puff pastry and place a log of filling onto the sheet, close to the bottom so there is room to fold the pastry over. Fold the pastry over and press the edges closed with a fork. Slice into portions
  4. Mix the remaining egg with a splash of milk and brush the tops of the rolls. Optionally, make a few small slits on top to let steam escape. Bake for 25–30 minutes, until golden brown and cooked through.
  5. Let the rolls rest for a few minutes before serving and serve with ketchup or bbq sauce
