A cozy autumn cake with a soft pumpkin spice sponge, creamy cinnamon cream cheese frosting and ribbons of salted caramel. This is the kind of cake that feels right with a cup of coffee on a chilly afternoon.

For a more pronounced pumpkin flavour, use a good-quality canned pumpkin purée or a thick homemade purée.
Pumpkin cake should be soft and moist, not dry. Start checking around the 30-minute mark. A skewer should come out with a few moist crumbs attached, rather than completely dry.
This is especially important with cream cheese frosting. If the cake is still warm, the frosting can soften and slide right off. Let it cool completely before decorating.
For the prettiest finish, add the caramel in a few generous spoonfuls and swirl only a handful of times. You want distinct ribbons of caramel rather than completely mixing it into the frosting.

This cake is best served at room temperature. For an extra autumnal touch, you could finish it with a sprinkle of cinnamon or a little extra flaky sea salt.
Store the frosted cake in an airtight container in the fridge. Let it sit at room temperature for 20–30 minutes before serving so the cake and frosting soften slightly.
Enjoy loves! xx

The caramel sauce can be homemade or store-bought. If you want a salted caramel flavour, add a little extra salt to taste.
